- 1 can of white asparagus (approx. 400g) or cooked fresh white asparagus
- 1 medium potato
- 1 leek (only the white part)
- 1 garlic clove
- 500 ml of vegetable broth
- 100 ml of cooking cream or evaporated milk
- Extra virgin olive oil
- Salt and pepper to taste
Step-by-Step:
- Wash and chop the leek and garlic. Peel and cut the potato into small pieces.
- In a pot, sauté the leek and garlic in a drizzle of olive oil until tender.
- Add the potato and vegetable broth. Cook for 15 minutes over medium heat or until the potato is soft.
- Add the white asparagus (save a couple of tips for garnish), salt, and pepper. Cook for 5 more minutes.
- Blend everything with an immersion blender until smooth. Add the cream and mix well.
- Serve hot, garnished with the asparagus tips and a drizzle of olive oil.
