
Acorn-fed Iberian ham: the jewel of the dehesa and the peak of Iberian ham
To talk about acorn-fed ham (jamón de bellota) is to talk about the greatest treasure of Spanish gastronomy. It comes from the Iberian pig raised free-range in the dehesa, which during the montanera season feeds on acorns and grass. That way of life and that diet are what give its meat a unique marbling of fat that melts on the palate, along with a deep, sweet flavour and that unmistakable nutty note.
