White rice: the staple that never lets you down in Spanish cooking
White rice is one of those pantry basics that seem humble until you run out. Neutral, soft and obliging, it is the blank canvas of Spanish cooking: it works just as well alongside a meat stew in sauce as with grilled fish, garlic prawns or the classic arroz a la cubana with a fried egg and tomato.
It never asks for the spotlight, yet without it half the kitchen falls short.
