The hams and shoulders covered by the Guijuelo PDO are meat products obtained after submitting the hind and hind limbs of the Iberian pig or its crosses with the Duroc authorized by national legislation, guaranteeing a minimum of 75% of the Iberian breed, to a process of salting, washing, post-salting, curing-ripening and aging.
Hams and shoulders from Iberian pigs with a natural feeding in the montanera based on the best acorns and natural stubbles. These hams are cured in natural dryers pampering their traditional process between 36 and 48 months.
