The preparation of traditional nougat

Nougat is a traditional sweet that is consumed at Christmas in Spain and other countries. Although there are numerous varieties of nougat, there are two main types, from which most of the nougat we consume are made: soft nougat or Jijona nougat and hard nougat or Alicante nougat. The basic ingredients with which most nougats are made are almonds, honey, sugar and egg white, and the process is as follows.

Almond roasting: The almonds are roasted in an oven until they acquire a golden color and their aroma intensifies. This step is crucial to enhance the flavor of the nougat.

Cooking honey and sugar: In a saucepan, mix honey and sugar. Cook over medium-high heat, stirring constantly, until a syrup forms.

Mixing: Once the syrup has reached the desired consistency, add the toasted almonds. The mixture is moved to ensure that the almonds are well impregnated.

Add egg white: For Jijona nougat (soft), egg white whipped until stiff is added, which provides a soft and spongy texture to the nougat. This mixture is cooked over low heat, stirring constantly until it thickens.

Molding: The mixture is poured into previously prepared molds, which are generally covered with rice paper or butter paper to prevent the nougat from sticking. For Alicante nougat, the mixture is pressed well to obtain a compact and firm block.

Cooling: The nougat is left to cool for several hours or even days, depending on the type. Once cooled, it is cut into portions and packaged.

The types of nougat that are included in the Christmas assortments

Nougat is one of the most emblematic sweets in Spain, especially during the Christmas season. Although their basic ingredients are similar, there are different types of nougat, each with its own characteristics, the most common are the following:

Alicante nougat (Hard nougat): This type is also known as whole almond nougat. It is characterized by its crunchy texture and having whole almonds inside. The main ingredients are toasted almonds, honey and sugar.

Jijona Turrón (Soft nougat): Unlike Alicante nougat, this one is soft and pasty. It is made by grinding almonds until a paste is obtained, which is then mixed with cooked honey and sugar, and sometimes with egg white.

Yolk nougat: It is a soft nougat made from egg yolk, sugar and ground almonds. After preparation, it is often lightly toasted to give it a golden finish on the outside.

Chocolate nougat with almonds: Although it is not a traditional variety, it has gained a lot of popularity in recent decades. Combines chocolate, usually with milk, and whole or chopped almonds.

Guirlache nougat: It is made with almonds and caramel (caramelized sugar and honey). It is crunchy and has an intensely sweet flavor with a touch of toast from the caramel.

Fruit nougat: Incorporates pieces of candied fruit into the traditional mixture of almonds, honey and sugar. Its appearance is colorful and its flavor is a combination of the sweetness of fruits and nougat.

Stone nougat: It is a less known but traditional nougat, with a very soft texture and a more subtle flavor. It is made with ground almonds, sugar, grated lemon and cinnamon.

These are just some of the varieties of nougat that can be found in Spain. The Spanish nougat tradition is rich and diverse, the nougat assorted in individual portions allows you to enjoy the nougat of Spain in all its varieties.
