Guide to Choosing the Best Spanish Olive Oil

Guide to Choosing the Best Spanish Olive Oil

Extra virgin olive oil (AOVE) is one of the most valued treasures of Spanish cuisine. It´s not just an ingredient: it´s culture, health, flavor, and tradition. With so many options available, choosing the best AOVE can seem overwhelming, especially if you´re buying from outside of Spain. In this guide, we help you understand how to identify a good oil and which one best suits your tastes or culinary needs.

What exactly is AOVE?

AOVE is oil obtained solely by mechanical means, without additives or chemical treatments, and with an acidity of less than 0.8%. It is the pure juice of the olive and is considered the highest category of olive oil.

But not all AOVE are the same. The olive variety, geographical area, type of cultivation, harvesting time, and extraction method influence their quality, flavor, and properties.

Most common olive varieties in Spain

Spain produces a wide variety of oils thanks to its geography and climate. These are some of the best-known varieties:

Picual (Jaén, Córdoba, Granada)

Intense, bitter, and slightly spicy. Very stable and perfect for frying or eaten raw with bread. Rich in antioxidants.

Arbequina (Catalonia, Aragon, Navarre)

Sweet, smooth, and fruity. Ideal for people new to AOVE or looking for a delicate flavor. It pairs well with salads and fish.

Hojiblanca (Córdoba, Malaga, Seville)

Versatile and balanced. Fresh flavor with notes of grass, apple, or almond. Perfect for dressings or cold dishes.

Cornicabra (Toledo, Ciudad Real)

Strong and full-bodied. With hints of olive leaf and apple. Ideal for stews and traditional cuisine.

Empeltre, Manzanilla, Lechín...

There are many more local varieties with unique profiles. Each brings its own character to the table.

Designations of Origin: Quality Guarantee

Protected Designations of Origin (PDO) guarantee that the oil has been produced, processed, and packaged in a specific region following quality criteria. Some of the most recognized PDOs in Spain are:

Priego de Córdoba PDO
Sierra de Cazorla PDO
Baena PDO
Les Garrigues PDO
Montes de Toledo PDO

Buying an AOVE with a PDO means choosing its origin, expertise, and authenticity.

How to Taste a Good AOVE

If you want to learn how to distinguish a good oil, do a simple tasting at home:

Color: Although it can be deep green or gold, color does not indicate quality.
Aroma: It should smell of fresh grass, fruit, tomato plants, almonds… It should not smell rancid or musty.
Flavor: Look for a balance between bitterness, sweetness, and spiciness. Good oils have character but also harmony.
Tip: Try it alone with white bread or in a teaspoon. You can also compare it with other more common oils to tell the difference.

What to look for when buying?

When choosing an oil, consider:

Harvest date: the more recent the harvest, the better. Oil oxidizes over time.
Packaging type: preferably in a dark bottle or can to protect it from light.
Acidity: the best AOVE have an acidity level below 0.5%.
Certifications: organic, PDO, international competition awards, etc.
Origin: focus on artisan producers and traditional regions.
How AOVE is made, from the olive tree to your table
The AOVE production process is key to ensuring its quality. It all begins with the olive harvest, which takes place at its peak ripeness, usually between October and December. The earlier the olives are harvested, the greener and more aromatic the oil will be. Harvesting can be done manually or mechanically, but the olives should always be kept away from the ground to prevent damage.

Once harvested, the olives are quickly transported to the olive mill, where they are cleaned and cold-ground (temperatures below 27°C) to preserve all their aromatic and healthy compounds. The juice is obtained from this paste through pressing or centrifugation.

The oil is then decanted or filtered to remove impurities and stored in stainless steel tanks, under controlled temperature and darkness. This careful process is what makes the difference between a simple oil and an exceptional AOVE.
