Are nougats without added sugars less fattening?

With this denomination, we tend to believe that nougats without added sugars are much lower in calories or with less fat content than the traditional ones, such as the traditional hard and soft ones.

But the truth is that, according to the Organization of Consumers and Users of Spain, OCU, the nutritional value between one and the other does not vary as much as we might think. In fact, traditional nougat contains 4.5% more fat than nougat without added sugar.

In addition, despite having a reduction in sugar in its preparation, which can reach up to 91%, the reality is that the average reduced calories is only 11%.

In fact, that the nougat indicates that it does not contain added sugars does not imply a total absence of sugar in its production process. Rather, it points out that a nougat of about 200 grams can contain up to 1 gram of added free sugar, in addition to the sugars that another of its main ingredients already contains, nuts, such as almonds.

In this way, the real difference in calories between the traditional nougat from Jijona and Alicante and the nougat without added sugar is really minimal, since the latter have about 436 kcal per 100 grams.

Therefore, are nougats without added sugars less fattening?

Yes, but just a little less.

The least fattening nougats: the healthiest
Within the traditional nougat and its different varieties, which do not involve a reduction in sugar, we can find nougat that are more or less fattening simply because of the proportion of their ingredients.

Although it is true that no nougat is categorized as a frequently consumed food, there are some that are more recommended than others. For example, the most fattening nougat is chocolate, while the least harmful are yolk.

Thus, we can point out that the nougats that are less fattening are, ultimately, the healthiest due to their production process and the amount of each of their ingredients.

More nuts, nougat that are less fattening

One of the keys to determining which nougat is less fattening and healthier is the amount of nuts and sugars that have been used in its preparation.

On the one hand, nuts, especially almonds, are among the healthiest and most nutritious ingredients that you can find in nougat.

In fact, it is the proportion of almonds and other nuts that a nougat contains that determines its category and quality. Therefore, the higher the nut content, the lower the amount of sugar. And, therefore, the better the quality, the healthier the nougat in particular will be and the less fattening it will be.

These are the categories of nougat that you can find in the market according to the amount of nuts they have:

Supreme Quality: 64% in soft nougat and 60% in hard nougat.
Extra Quality: 50% soft nougat and 46% hard nougat.
Standard Quality: 44% in soft nougat and 40% in hard nougat.
Popular Quality: 30% soft nougat and 34% hard nougat.

Thus, as the quality of the nougat falls and, consequently, the proportion of almonds or other nuts, the greater the proportion of sugars. Even in the worst cases, you can find nougats that contain up to 70% sugar, which means that a tablet of about 250 grams can have a quantity of sugar of between 175 and 190 grams.

Are traditional nougats the least fattening?

As we have already mentioned, the quality of the nougat is decisive as to whether they are more or less fattening due to the proportion of its ingredients.

In this way, due to its preparation, there are also differences between traditional nougat, such as the soft one from Jijona and the hard one from Alicante, and the various types of nougat, such as chocolate, praline or egg yolk.

One of the great differences between classic nougat and its varieties is that the proportion of raw materials required to determine its quality, such as almonds, coconut, egg yolk or cocoa, are different from the traditional ones.

For example, a yolk nougat only needs 45% raw material to enter the Supreme category. Therefore, the amount of corresponding sugar is greater in a supreme category yolk nougat than in a traditional soft nougat.

As the fats it contains also have an influence, and not so much because of the quantity but because of the quality, since the natural fat of nuts is not comparable to that of the cocoa butter used in chocolate nougat.

Therefore, there is an important difference between the different types of varied and traditional nougat, the latter being the ones with the best quality, becoming the least fattening nougat.
