Sausage with PGI (Protected Geographical Indication) Chorizo de Cantimpalos with natural flora. Cantimpalos Chorizo is a cured, in-built product made from fresh fatty pork meats, to which salt and paprika are added as basic ingredients and to which also garlic and oregano can be added, subjected to a drying-ripening process .
Aspect to cut: At the cut it presents an intense red color dotted in reddish white due to the presence of pigmented fat pieces. The dough will be fully bonded, that is to say, it will be homogeneous, compact and free of pieces of fat whose size is more than 0.5 cm in diameter.
Aroma: The internal aroma is an integration of different components from the maturation process of meats, mildly acidic, mild and medium intensity, in addition to those of the authorized spices added, without any of them predominating.
In the mouth juiciness and cohesiveness is appreciated, it will be easily chewable, non fibrous and free of unwanted elements (like fascias, fractions of bones, ganglia or tendons); On the whole pleasant palatability, with no spicy taste.
