How to store ham to preserve its flavor

When purchasing a ham hock, the first important decision is where to store it. Ideally, it should be in a cool, dry place away from direct sunlight. Although it doesn´t require refrigeration, it´s best to avoid hot areas such as heavily used kitchens or places with nearby heat sources. A pantry, a wine cellar, or a well-ventilated corner of the kitchen can be perfect.
It´s also important to know that the ideal temperature is between 15 and 25 degrees Celsius, with no significant fluctuations.
Once you´ve started slicing the ham, it´s very important to only cut the amount you´ll consume at that time. If you leave too much surface area exposed, the ham will begin to dry out and oxidize. After each cut, it´s a good idea to cover the exposed area with slices of the ham´s own white or yellow fat, which act as a natural barrier against oxidation and moisture loss. You can also cover it with a clean cotton cloth that allows the ham to breathe but protects it from air and dust.
The placement of the ham hock also influences its preservation. If you´re going to eat it slowly, it´s recommended to start with the most cured part, the maza, leaving the babilla for later, as it´s usually drier and preserves better. Turning the leg over to continue cutting the other side is a natural part of the process, but it must be done at the right time to avoid waste or premature drying.
Care During Consumption
Being a naturally cured product, ham has a long shelf life, but this doesn´t mean it shouldn´t be overlooked. If it goes too long without being eaten, the surface may begin to dry out. In that case, simply discard the first layer of the cut and continue with the inner slices, which will still be in perfect condition.
If you notice that the cut area begins to change color, become dull, or hard, it´s a sign that it needs a surface cleaning. To do this, make a new cut in the dry area and cover it again with grease and a clean cloth. You can also brush on a little light olive oil to protect the surface and give it a shine.
When it takes a long time to consume the entire piece, some people choose to debone the ham after a significant portion has been sliced and vacuum-seal it in portions.
This option is very useful if you have a vacuum-sealing machine or can take it to a delicatessen that offers this service.

Sliced ham presents other challenges. Because it lacks its own protective structure, it is more susceptible to drying out, oxidation, and loss of aromas. The best way to store pre-sliced ham is vacuum-sealing. This prevents contact with air and preserves all the product´s qualities for weeks, even months if kept refrigerated.
Hand-sliced ham wrapped in special sausage paper or waxed paper should be kept in an airtight container and stored in the coolest part of the refrigerator. This prevents excessive cold from altering the texture of the ham, which should remain juicy and tender.
Before eating sliced ham, it´s essential to remove it from the refrigerator and let it sit at room temperature for about 20 to 30 minutes. This time allows the fat to regain its silky texture and the ham´s aromas to fully release. If it´s vacuum-packed, it´s advisable to open it a little earlier and place the slices on a plate to allow them to breathe slightly.
How long can it last?
A whole, unopened leg of ham can last several months if stored properly. Once opened, it´s ideal to consume it within 3 to 4 weeks, although it can be slightly longer with proper care. Sliced, vacuum-packed ham can be stored for 2 to 3 months in the refrigerator, although it´s always best to follow the expiration date provided by the manufacturer.
In all cases, the most important thing is to control the humidity and temperature, and avoid exposure to the elements. Whether it´s an acorn-fed Iberian ham or a more affordable Serrano ham, proper storage is essential to enjoy it to the fullest.
