Spanish saffron, the perfect addition to your recipes

Spanish saffron: more than just a spice

Saffron is much more than a spice—it´s a symbol of tradition, a gastronomic luxury, and an essential ingredient in Spanish cuisine. Its intense color, unmistakable aroma, and delicately bitter flavor make it a culinary gem valued around the world.

At Your Spanish Shop, we offer a selection of Spanish saffrons that are the best way to add flavor to your dishes.

What is saffron?
Saffron is derived from the stigmas of the Crocus sativus flower, a delicate plant that blooms only a few days a year, usually in autumn. Each flower contains only three red stigmas, which must be hand-picked with great care. It takes around 150,000 flowers to produce just one kilo of dried saffron, explaining its high price and its nickname: red gold.

Spain is one of the world’s top saffron producers, especially in regions like La Mancha, where the climate and soil are ideal for its cultivation. Spanish saffron—particularly that with Protected Designation of Origin (PDO) La Mancha—is known for its exceptional quality.

Properties and benefits of saffron
Saffron stands out not only for its flavor and color but also for its numerous health benefits. Among them:

  • Natural antioxidant: helps fight cellular aging.

    • Digestive aid: traditionally used to support digestion.

    • Mood booster: some studies suggest effects similar to mild antidepressants.

    • Relaxant: in tea form, it may help reduce stress and promote sleep.

    In the kitchen, saffron:

    • Adds a rich golden color to dishes.

    • Has a strong, floral aroma reminiscent of hay or honey.

    • Offers a slightly bitter, earthy flavor that is unique and hard to replicate.

How to use saffron in cooking
To get the most out of saffron, it must be used correctly. The best method is to lightly toast it (just a few seconds on aluminum foil, without burning it), then infuse it in hot water or broth for at least 10 minutes. Add the infusion to your dish for an even distribution of flavor and color.

You can also crush the threads in a mortar before dissolving them, especially if the dish contains little liquid.

Important: Use in moderation. Saffron is potent—just a few threads are enough to season a dish. Too much can result in a metallic or overly bitter taste.

    Three Traditional Recipes with Saffron

    Valencian Paella
The undisputed queen of Spanish cuisine wouldn’t be the same without saffron. In its traditional recipe, saffron gives the rice its color and depth, alongside ingredients like chicken, rabbit, green beans, and garrofó (a white legume typical of Valencia).

    Key ingredients:

    • Bomba rice

    • Chicken and rabbit

    • Green beans and garrofó

    • Crushed tomato

    • Chicken broth or water

    • Saffron (8–10 threads)

    • Rosemary (optional)

    • Olive oil, salt

xtra tip: Dissolve the saffron in a bit of hot broth before adding it to the rice. This ensures even distribution of flavor and color.

    Seafood Zarzuela
This rich seafood stew is typical of Spain’s Mediterranean coast. It combines shellfish, white fish, and a sautéed base enriched with almonds, white wine, and of course, saffron.

    Key ingredients:

    • Mussels, clams, prawns, squid

    • Hake or monkfish

    • Onion, garlic, tomato

    • Toasted almonds

    • Dry white wine

    • Fish broth

      • Saffron (about 6 threads)

Saffron is added to the broth, giving the zarzuela its characteristic amber color and a deep, sophisticated flavor.

      Seafood Cream with Saffron
An elegant starter that impresses with its smoothness and subtle perfume. Saffron brings a warm, floral note that enhances the seafood flavors.

      Key ingredients:

      • Prawns or large shrimp

      • Leek, carrot, onion

      • Heavy cream or evaporated milk

      • Brandy or cognac

      • Fish broth

      • Saffron (4–6 threads)

    • After sautéing the seafood and flambéing with brandy, it is blended with the vegetables and cooked with saffron-infused broth. The result is a silky, fragrant, and delicious cream.
