- 2 garlic cloves
- 1 teaspoon of sweet paprika

Step-by-step
Prepare the sofrito
In a paella pan, heat a good splash of olive oil.
Sauté the finely chopped onion over medium heat until transparent.
Add the chopped garlic and grated tomatoes. Cook for 5-7 minutes until the tomato reduces and forms a thick sofrito.
Add the seafood
Add the chopped squid and sauté for a few minutes.
Add the cleaned shrimp and mussels. Cook until the shrimp change color.
Toast the noodles
Add the noodles and fry them with the sofrito. Stir well to coat them with the flavor.
Add the stock
Add the hot fish stock gradually.
Add the sweet paprika, saffron, and adjust the salt.
Cook over medium heat
Cook the fideuá for about 10-12 minutes without stirring.
If necessary, add more stock gradually.
Rest and serve
Once the noodles are cooked and the liquid has evaporated, remove from heat and let it rest for 5 minutes.
Serve hot with alioli on the side.
