The choricero pepper is one of the most emblematic ingredients in the cuisine of northern Spain, especially the Basque Country, Cantabria, and Navarre. Its history is closely linked to the arrival of peppers in Europe from America at the end of the 15th century. The climatic and soil conditions of the northern peninsula proved perfect for the cultivation of certain varieties of peppers, which, when dried, offered a unique aroma and flavor.
Unlike other dried peppers, the choricero pepper is not used as a powdered spice, but rather is hydrated to extract its pulp and add it to stews, sauces, and casseroles. Its deep red color, slightly sweet flavor, and smoky note have made it an essential ingredient in traditional recipes such as Salsa Vizcaína, Marmitako, and various seafood and meat stews.
The name "choricero" comes from its historical use in making chorizo, as its meat added color and flavor to the sausage dough. Today, although this use continues in some places, it is more commonly found as a main ingredient in stewed dishes.
The choricero pepper belongs to the Capsicum annuum variety and is harvested in summer, when it reaches its peak ripeness. It is left to air dry, traditionally hung in strings, which allows it to retain its color and aroma for months. Drying is not only a preservation technique but also a process that enhances its flavor and gives it nuances that it would not have when fresh.
Once dried, it has a thin, shiny skin, a fleshy interior, and an aroma reminiscent of earth, sun, and firewood. Its flavor is mild, with sweet notes and a slightly acidic background, allowing it to enrich dishes without masking other ingredients. It is highly prized because, unlike other dried peppers or some chili pepper varieties, it does not add heat.
Its pulp is the most prized part and is extracted after rehydrating the pepper in warm water. This smooth, aromatic red paste dissolves easily in sauces and stews, providing a deep flavor and an appetizing color that enhances any dish.

Meat of Pepper Trotters La Especiera del Norte 200 gr.€4.63In Basque cuisine, the choricero pepper is almost a hallmark. Dishes like Biscayan cod wouldn´t be the same without it. It´s also essential in the preparation of marmitako, a seafood stew with tuna and potatoes where the pepper adds the touch of color and sweetness needed to balance the flavor of the fish.
In Navarre and La Rioja, it´s used in lamb stews, meat sauces, and vegetable casseroles. Its versatility makes it a versatile ingredient that works equally well in seafood and mountain cuisine. Furthermore, its flavor pairs wonderfully with other Mediterranean ingredients such as tomato, garlic, or olive oil.
Nowadays, it´s also available in pre-prepared versions, in jars with ready-to-use pulp. This saves time in the kitchen and makes it easy to use in quick recipes without sacrificing authentic flavor.

Although it is a deeply traditional ingredient, the choricero pepper has found its place in modern and creative cuisine. Chefs around the world use it to add depth of flavor to innovative dishes, from creams and cold soups to sauces for exotic fish or slow-cooked meats.
Its ability to balance and round out flavors makes it very useful in fusion recipes, where it is mixed with oriental spices, fresh herbs, or Latin American ingredients. It is also commonly seen as a base for pasta sauces or in vinaigrettes for warm salads, demonstrating that its potential goes far beyond traditional stews.
