The shoulder is the forelimb of the pig, it has the same quality as the ham since it has the same raw material and the same healing process. It is more economical and yet it is tastier due to the better diffusion of salt through its meat, as this piece is smaller and has less infiltrated fat than ham.
The boneless palette center format allows great versatility when it comes to eating it, and it can be sliced, cut into tacos for cooking or any other format you need.
