The potatoes to the importance is a very popular and economical dish, although currently they are cooked throughout the national territory, they originate of Castile and Leon.
Ingredients for 4 people:
800 gr of potato
1 onion, if we do not have an onion served
2 cloves garlic
100 ml white wine
Extra virgin olive oil
700 ml broth
Parsley, if it is much better fresh
Peel the potatoes and cut into slices about an inch, then season them. Whisk the eggs in a bowl. We prepare a plate with flour. Pass the potato slices through the beaten egg and the flour. Fry the potatoes briefly in a frying pan with oil and drain them on a dish lined with kitchen absorbent paper. Reserve.
Peel and chop the garlic and cut into the mortar. Add the strands of saffron and wine. Mix well.
Put some oil in a pan. Chop finely chopped chive. Season. Add a tablespoon of flour and sauté briefly. Add the mixture and mix well. Place the potatoes and cover with the broth. Cook over low heat for 15-20 minutes, stirring occasionally. Put them to the point of salt. Sprinkle with chopped parsley and serve.
If we have a few potatoes we can eat them the next day, if they have been somewhat dry we can add more broth to make them juicy again.
