Lentils with sausage

"Lentils with chorizo", a traditional, tasty and nutritious ideal for both combat the winter cold as spring stew.

Preparation lentils with chorizo:

Although often sell clean, it never hurts to wash and "shave" pig's ear.
Once clean, season and enter in the pressure cooker. We cover with water and pour the ham bone, a bay leaf and leek clean.
We cover the pressure cooker and cook for 20 minutes over low heat. We cool the pot, very carefully, under running cold water and, once all the pressure has been opened.
While the ear is cooked, we take a pardinas water to lentils, drain well and we toss in a pan with a clean carrot and garlic cloves. We cover with cold water and put the pan into the fire.
As it starts to boil, season and let it continue to cook for 25-30 minutes on low heat. We turned off and booked out the fire.
Chop the onion and carrot clean, finely.
Grate the tomatoes, and cut the sausages into slices half a centimeter thick.
In a saucepan with three tablespoons of olive oil, fry onion simmered and carrot for five minutes.
We incorporate the grated tomato and chorizo. Stir gently.
Let the set is made for 10 minutes.
Escurrimos lentils, saving the broth (frozen) for another time, and add to the pan of sauce.
We cover with broth cooking the ear, and it cut into pieces, along with the sausage cut into thick slices. If you want you can also add to the lentils with chorizo, carrot we used to cook lentils.
Cook for another ten minutes, we tried the salt, if need rectifying.
