To combat the cold and satiate nothing better than these beans with clams and porcini palate.
Autumn is one of the stations I like, gastronomically speaking. During this time there are many new ingredients that go into our kitchen. Hunting, mushrooms and especially vegetables, are the protagonists of many of our elaborations.
One of the latest recipes spoon we have been prepared and tasted these "beans with clams and porcini".
A strong dish of intense flavors with boletus providing its nuances.
Ingredients Beans with clams and mushrooms for 4-6 people:
300 g of beans
375 gr or "fourth and half" clam
200 g of boletus or mushroom-like
3 Garlic
1/2 onion
1 Hello, bay
Dill
1l Chowder
Salt
Olive oil
Preparation beans with clams and porcini:
The night before the preparation of these beans with clams and porcini soaking water put a pinch of salt and beans.
When we go to get the recipe, we pour the fish stock in a pressure cooker along with the drained beans and bay leaf.
Add the onion and garlic half, cleaned and peeled.
We cover and put on medium-high heat.
As the valve up to the maximum, lower the heat to low and cook for 15 minutes. We hope the pressure will go and open the pot.
We found that the beans are ready. To do this we catch a bean with a spoon and crush with a finger. This must have some resistance, let a tad hard. Since then we again put the pot on the fire five minutes.

Then wash the clams in cold water.
We put a frying pan with three tablespoons of olive oil.
Sauté the mushrooms a few seconds and add the clams and dill.
As open, 30-45 seconds, add the contents of the pan to the pot with the beans.
Stir gently so that the beans are not broken and cook for five minutes over low heat.
