Ingredients
50 grams of fat (pork)
50 grams of butter
50 grams of wheat flour
500 cc of meat broth
1/2 cup dry white wine
Preparing the sauce
Place in a pot butter, fat, flour and bring to a gentle heat, stirring and leaving cook for 10 minutes. Add broth and climb over moderate heat. Continue stirring until it begins to boil. Then add the wine.
Return to low heat and cook a little longer. Turn off heat, let cool and remove the fat that is on the surface. Strain and refrigerate until use.

Ingredients
2 onions
2 carrots
1 leek
1 clove garlic
1 bay leaf
Salt and pepper
1 lemon (juice)
1 teaspoon sugar
1 cup vinegar
Preparing the sauce
Saute onions and cut into wheels with chopped leek carrots. Add the chopped garlic, bay leaf, salt, pepper, lemon juice, sugar and vinegar. Boil for 20 minutes and serve hot on the chosen meat. It is ideal for fish and meat.
