This recipe is a very typical dish of Cadiz and is ideal for an aperitif good.
Ingredients
100 gr. chickpea flour
100 gr. wheat flour
2 to 3 Chives
Chopped parsley
Salt
Prawns
½ cup of soda
Water
Salt
Olive oil
Preparation:
In a bowl add chickpea flour, wheat flour, chives very finely chopped, chopped parsley, shrimp (amount to taste), the gas, parsley and a pinch of salt. All ingredients are mixed until a homogeneous mass is achieved, if it is too thick water added and keeps moving.
When the mixture is made let stand at least 2 hours, the more you let stand much better.
Very important: during the rest do not cover the bowl and the dough is fermented and therefore breaks.
When fry the fritters the oil must be hot enough and always use a wooden spoon to take the dough to the pan, brown the tortilla on one side and then turn around. Depending on how much you pick up on the spoon tortillita you will get a more or less thick, preferably thin so that they are more crisp and well done inside. Having prepared a tray or plate with paper towels.
The authentic shrimp fritters should be golden brown and crispy. Although this is the taste of the consumer.
If spare much mass can be frozen perfectly. When you want to thaw before frying, if we see that the dough is a little thick you add water, stir and ready to take to the pan.
