Cheese Torta del Zújar Cremositos del Zújar

It is made with raw Merino sheep milk, natural vegetable rennet (by maceration of the pistils of the "Cynara Cardunculus" thistle flower) and common salt, elaborated and matured following traditional methods and with a minimum maturation period of 60 days.

At the end of its maturation it must present the following characteristics:

Its texture can present three types:

Very soft, almost fluid or liquefied, in which case it is very soft, adherent and melting, its rind being thin and very sensitive to handling. Its maturation is 2 months.
Soft, creamy and unctuous, in which case it is very smooth, adherent and melting, presenting a more stable and firm crust; Act for the cut also known as "Seated Cake". Its maturation is 3 months.
Hard, cut. It already loses its spreadability characteristic and becomes hard cheese. Its cure exceeds 12 months
