Tuna is one of the most consumed in our country blue fish. Today we cook it back and forth and accompany with fried mushrooms and vegetables, resulting in a very juicy and flavorful dish.
1 kg. of tuna,
200 gr. of oyster mushrooms
2 cloves garlic
2 grated tomatoes
½ red pepper
1 green pepper
a teaspoon of paprika
a bay leaf
50 ml. sherry vinegar.
Chop the chard and saute mushrooms in a skillet with a little olive oil. When they are well browned, incorporates chopped garlic. Once the garlic begins to brown, add the chopped onion, peeled and cut julienne carrots and sliced peppers. Cook for 5 minutes and add the paprika and grated tomato. Salpimenta, add the bay leaf and sauté the assembly until the sauce is well cooked. Then, add the sherry vinegar and let reduce. We booked this sofrito.
Tuna'll cook on a hot plate with a few drops of olive oil, making sure that it is golden brown on the outside and juicy us inside.

Note: If the piece is too thick tuna, finish cooking in the oven once you have marked on the plate, always watching not to dry inside.
