Indeed, there are several types of mustard, the star product of salsa lovers. In addition to its flavour, this sauce has multiple properties and knows practically no limits for its applications in gastronomy, as is the case with Spanish mustard.

Therefore, in this post we are going to show you the different types of mustard that you can easily find.

Where does mustard come from?

Before starting with the different types of mustard, it is quite interesting to know its origin. This sauce comes from the spice from the mustard plant, native to the Mediterranean basin.

It is its seeds that are usually used for its preparation, which results in a condiment whose flavor stands out for being intense, bitter and spicy.

Today, this product is used both in haute cuisine recipes and other restaurants, and is sold in multiple formats in all supermarkets.

The grains of the mustard plant are formed by myronate and myrosin, which when mixed and crushed with water release substances, which are responsible for its characteristic spicy flavor.

According to its preparation and quantity of substances and ingredients, there are three main varieties:

* Black mustard, which has the most intense flavor.
* Brown mustard, whose flavor is the least spicy.
* White mustard, which lacks myronate and is usually mixed with black and brown, as is typical in English cuisine.
These are the great varieties that give rise to the different types of mustard and that offer various gastronomic uses.

Keep in mind that the seeds of the mustard plant have never been consumed unprocessed and that their preparation completely transforms the spice.

Mustard sauce is made from ground, whole or crushed mustard seeds and mixed with water, vinegar, lemon juice, wine, salt and other liquids that are usually acids, spices or condiments.

Therefore, although mustard initially stands out for being a somewhat more spicy sauce, its varieties can also have a sweet taste, depending on the different ingredients that have been used. Also, if you cook the sauce, the mustard loses its pungent flavor.

Types of mustard and uses

Since its appearance in Europe, mustard has been made in different ways until it has resulted in the sauces we know today. As we have seen before, there are three basic types of mustards with their characteristic flavors.

basic mustards

As you know, black mustard is the one that stands out for being the spiciest compared to the rest. Originally, it was the most widely used in Europe, but its use was gradually replaced by brown, also known as parda, because it is less spicy and is better suited to the palate of Europeans. In addition, their cultivation is quite grateful, so they have been produced and consumed in large quantities.

Precisely because it is the spiciest, it is used and consumed almost exclusively in India, where it continues to have a great presence and importance.

As for the brown, it has become especially popular in Europe and is the most used in European mustards due to its great intense flavor, but not so spicy.

If we jump across the pond to North America, the role of mustard changes again. In the United States, the great popularity goes to white mustard, also known as yellow, which has a much milder flavor.

From the mixture of these three mustards with various condiments, the sauces that we know today and that we usually consume are born.

In fact, the range of mustard types is so wide and they change so much from one end of the world to the other, that in order to have a more or less clear idea it is better that we focus on the types of mustard that we can consider as the main ones in the different international cuisines and that you can find in any supermarket in Spain.

american yellow mustard

What's a hot dog without mustard sauce? Exactly, I don't even need to say it. This mustard is the typical one used in fast food restaurants. It will be the most popular in the United States for a reason.

It has a bright yellow color that is obtained by the use of yellow mustard seeds, which are ground with tremendous fineness. But, what really gives it that characteristic color is the use of turmeric powder in its preparation.

Both ingredients are combined and mixed with vinegar, water, and sometimes other mild spices, to form a thick sauce.

Its spicy, slightly sweet flavor, since it usually contains sugar, is ideal for combining it in hot dogs and hamburgers, but it is also often used as a dressing in some salads or marinades.

english yellow mustard

The truth is that American yellow mustard is a variant of English yellow mustard. This sauce is a widely used product due to the quality of its flavor, which is much more spicy.

In fact, as soon as you try it you feel how the itching mercilessly runs through your nostrils. But, come on, it is not an exaggerated spicy either, far from it, since it contains some sugar, which reduces its intensity. Moreover, it is not very sweet either since it usually contains about 13 grams of sugar per 100.

For this reason, English yellow sauce is an ideal type of mustard to include in sandwiches and accompany roasts. However, be careful if you want to accompany it raw as it can be, as we said, especially spicy and destroy the rest of the flavors of the dish. In this way, the alternative may be to cook it.

Dijon mustard

Bonjour mon amour! We turn to the mustard preferred by the French, Dijon mustard, the spiciest of all the mustards that we can find. Its name comes from its place of origin, Dijon, in 1856. It is characterized by replacing the vinegar in its production with acid must from green grapes. Although, currently it is normal to do it with spirit vinegar or white wine.

It is ideal to be combined with other preparations, such as for making vinaigrettes and used in different stews. Plus, it doesn't have any sugar.

old fashioned mustard

I have to say this is my favourite. It is special compared to the rest because it is made with whole mustard seeds and mixed with other ingredients. The seeds are ground just enough to leave a homogeneous paste but without breaking all the seeds completely.

In it you can see black and brown mustard seeds, which gives it a less spicy flavor, since it also contains vinegar and some sugar. And it is perfect for sandwiches, stews and dressings.

sweet brown mustard

This is the preferred mustard in Germany, where there are many types of mustard to accompany its famous sausages, from the hottest to the sweetest. Here is the one that concerns us, the mustard that contains the most sugar and the one that best serves to complement the flavor of the sausages.

These are just some of the most common types of mustard that exist, but the truth is that I would not have time or space if I start talking about the mustard sauces that have been and will be in this world. What I can assure you is that, through the Your Spanish Shop online store, you will be able to enjoy the tremendous flavor of mustard. A sauce whose absence in your fridge would be more of a gastronomic crime.
