Spanish spoon dishes: the best option to combat the cold weather

We usually associate spoon dishes with the cold months, and they are the best way to combat the low temperatures. Spanish stews allow you to balance your diet and enjoy the colder months even more.  

Here are 4 basic recipes that make it easy to make your own recipe dishes. 

Castilian or garlic soup

Garlic soup is a traditional Spanish dish made with simple, straightforward ingredients. Here is a basic recipe for making garlic soup:

 

Ingredients

6 slices of stale bread

6 cloves of garlic

2 tablespoons olive oil

1 litre of chicken stock

1 egg

Salt and pepper to taste

 

Preparation

Peel and finely slice the garlic.

Heat the olive oil in a saucepan over medium heat and add the garlic. Cook until golden brown.

Add the stale bread and cook for a few minutes until lightly browned.

Add the chicken stock and bring to the boil. Reduce the heat and simmer for about 15 minutes.

Beat the egg in a bowl and add some of the hot stock. Mix well and add to the soup.

Simmer for another 5 minutes. Add salt and pepper to taste.

Garlic soup is a very versatile dish that can be customised with different ingredients and spices. Some popular variations include the addition of ham, chorizo, paprika and aromatic herbs such as rosemary or thyme.

Fabada asturiana

Fabada asturiana is a traditional Asturian dish made with beans, chorizo, black pudding and bacon. It is a hearty dish, perfect for cold winter days. 

Ingredients

500 grams of fabes

1 Asturian chorizo sausage

1 Asturian black pudding

200 grams of bacon

1 onion

2 cloves of garlic

2 tablespoons of olive oil

1 teaspoon of paprika

Salt and pepper to taste

 

Preparation

Soak the beans in water overnight.

Chop the onion and garlic into small pieces.

Heat the olive oil in a large pan over a medium heat. Add the onion and garlic and cook until golden brown.

Add the chorizo, black pudding and bacon to the pan and cook for a few minutes.

Add the soaked beans to the pan and cover with water. Add the teaspoon of paprika and mix well.

Simmer for about 3 hours, until the beans are tender. Stir from time to time to prevent them from sticking to the bottom of the pan. Add salt and pepper to taste.

Fabada asturiana is a perfect dish to share with family or friends, and is one of the most popular specialities of Asturian gastronomy.

Madrilenian stew

Cocido madrileño is made with chickpeas, beef, bacon, chorizo, black pudding, vegetables and spices. It is a complete and hearty dish that is usually served in several courses, starting with the soup, followed by the chickpeas and meat and finally the vegetables. 

Ingredients

500 grams of chickpeas

300 grams of veal meat for stewing

150 grams of bacon

2 chorizo sausages

2 black puddings

2 carrots

2 potatoes

1 onion

1 green pepper

3 cloves of garlic

1 bay leaf

Salt and pepper to taste

 

Preparation

Peel and cut the carrots, potatoes, onion, pepper and garlic into large chunks.

In a large pot, place the veal, bacon, chorizo and black pudding. Cover with boiling water.

Add the chickpeas, carrots, potatoes, onion, pepper, garlic and bay leaf to the pot. Add salt and pepper to taste.

Simmer for about 2 hours, until the chickpeas are tender and the meat is well cooked.

Cocido madrileño can be served with tomato sauce and chilli for a spicy touch.

 

Marmitako

Marmitako is a traditional dish from the north of Spain, specifically from the Basque coast. It is made with white tuna, potatoes, green pepper, tomato, onion and olive oil. It is a simple dish but full of flavour, perfect for cold winter days..:

 

Ingredients

500 grams of fresh white tuna

4 medium potatoes

1 green pepper

1 large onion

2 ripe tomatoes

2 cloves of garlic

olive oil

Salt and pepper to taste

 

Preparation

Peel and coarsely chop the potatoes and set aside.

Peel and chop the onion and garlic.

Cut the green pepper into strips.

Peel and cut the tomatoes into small pieces.

In a large pan, heat a little olive oil and add the onion and garlic. Sauté until golden brown.

Add the green pepper and tomatoes to the pot and cook for about 5 minutes.

Add the potatoes to the pot, cover with water and cook over a medium heat for about 20 minutes, until tender.

Add the white tuna to the pot and cook for a further 10 minutes, until cooked through.
