Red Tolosan beans Legumes Montes

Burgundy-colored bean, very shiny, with a white or beige spot on the embryo, and an almost round grain. Tolosa red beans are highly appreciated for the softness of the albumen, the fineness of flavor, and for not detaching the skin after cooking. After being cooked, they stand out for giving a very thick, chocolate-colored broth.

Bean widely consumed and known especially in the Basque Country. Generally used in traditional recipes in the form of stew accompanied by pork products and piparra chillies.
