Cheese made with sheep´s milk obtained in Leonese farms subjected to strict sanitary and pasteurized controls.
The practice of grazing by combining dry grasses with the varied vegetation of the Vega del Esla and the nearby mountains, gives this cheese a special bouquet.
Combination of milk with ferments, rennet and salt, accompanied by a maturation in a chamber with controlled temperature and humidity for more than three months in which the master cheesemaker pampers and takes care of the cheese by turning it over and smearing it with olive oil, keep it soft until it reaches its optimum consistency, the outstanding flavor and the pleasant aroma of good ewe´s cheese.
