Cured Pico Melero sheep cheese made with raw milk and matured for at least 180 days.
It is a mature ripened cheese with a developed flavor, with slight acid touches. It has an itch that appears gradually, without being excessive, has high persistence in the mouth with roasted aftertaste and nuts. Accompanied with a slight smell of lactic acid and notes of roasted nuts.
