Kombucha is an ancient drink that the samurai already drank and that is achieved thanks to the natural fermentation of tea and sugar carried out by a colony of bacteria and yeasts called Scoby. In the fermentation process, the Scoby eats up most of the sugar and produces bubbles that make the kombucha a delicious drink.
