This vinegar is obtained from the Palomino grape. The special thing about the land of Jerez is its climate, which favors the correct cultivation of the vines and the growth of the grape. The process of elaboration begins with the transformation of the wine in vinegar, passing later to barrels of oak for its aging during 24 months.
