The hams and paddles protected by the Guijuelo DOP are meat products obtained after subjecting the hind and anterior extremities of the Iberian Pig or their crosses with the Duroc authorized by the national legislation, guaranteeing a minimum of 75% of the Iberian breed, to a process of salting, washing, post-salting, curing-ripening and aging.
Hams from Iberian pigs with a natural feed in the mountain range based on the best acorns and natural stubble. These hams are cured in natural dryers, pampering their traditional process between 36 and 48 months.
