In addition to being made with milk from the area, this cheese is matured in the natural cave El Molin, in the heart of the mountain, using the same craftsmanship processes at the time of its inauguration, in 1913.
The Cabrales of Central Lechera Asturiana has been awarded in several editions with the World Cheese Award in the category "Blues", which means a great recognition to its great quality.
