Hake and shrimp cake with piquillo pepper sauce

It is very grateful recipe and better work it out the day before, so have time to bake and well chilled, thus the flavor is more appreciated.

Ingredients for cake hake:

500 grams of hake and cooked

10 or 12 or shrimp and cooked shrimp

4 or 5 crab sticks (surimi)

2 shallots (or half onion)

1 small leek (medium or large)

1 carrot

5 medium eggs

200 ml cream (lactose for intolerant)

100 ml. fried tomato packaging (which is free of lactose and gluten)

Extra virgin olive oil

Pepper

Salt

 

Ingredients for piquillo pepper sauce:

 2 or 3 red peppers and packaged

1 egg

Oil

Lemon

Salt

 

Preparation of hake cake:

The first will cook the fish and shrimp and it will boil water with a little salt. Once the water boils incorporate fish, half cooked add the shrimp thoroughly cleaned and let it finish cooking.

Aside, we drain them and let cool. Once cool, clean of thorns fish and peel the shrimp. Reserve.

The remaining cooking juices can save it to enrich other dishes.

In a skillet or wok put a background oil and sauté a few minutes shallots and leeks.

Add the peeled and chopped carrot, no need to be very choppy since then pass through the mixer. We braise a bit, put some salt and cook over low heat a few minutes.

Once the carrot is cooked add the flaked fish and shrimp, we give a few laps to make everything taste. Add a little of the cooking stock if necessary.

We passed a large bowl and add the eggs, chopped crab sticks, cream, fried tomato, a little pepper and more salt if need be. We spent all the mixer until well blended.

We greased molds and pour the preparation. We put them in a container with water, to put it in a water bath.

We brought the preheated oven at 180 degrees, heat down and covered with foil, in this way we avoid the steam fall on our cakes and too browned top.

Once you are done remove and let cool, then store in the fridge until you eat it.

Preparation of piquillo pepper sauce:

Piquillo pepper sauce is very easy to prepare. Simply make a mayonnaise and add two or three canned piquillo peppers.

Mayonnaise think we all know how it's done, but just in case there is a new apprentice for the room, I leave my way to work it out.

We put in the bowl of the mixer an egg and a dash of sunflower oil, olive leaves for my taste very strong. We spent a blender and we incorporate oil to the extent that our mayonnaise absorb it.

Once you see that it is thick add salt to taste, and the lemon juice, also at ease.

This time, we also added the peppers with salt and lemon, beat a few more minutes until the sauce is smooth.

Decorate to taste, here we put some lettuce in the cake, add a few peeled prawns and some sauce.

 When we spread take some piquillo pepper sauce on a small toast, then some of our rich cake and finally put a peeled shrimp on top.

 It is a true delight, a very "resultón" Incoming with which you shall be as fantastic hosts ... I guarantee it !!!
