Croquettes Mussels

We show you 2 different options for these croquettes, any of them is very good, choose the one you like.

OPTION 1.

Ingredients

200 g breadcrumbs

Salt

Oil

1 tablespoon brandy

1 medium onion

1/2 l. Fish Calde

1 and 1/2 kg Mussel Rock

2 eggs

2 tablespoons tomato sauce

6 tablespoons flour (to coat the croquettes)

75 g butter

125 g flour

Pepper

preparation

Step 1

Clean the mussels and put them in a saucepan covered with water on the fire to be opened. Remove the meat from the mussels and chop. Reserve.

Step 2

In another saucepan melt butter, add and fry the chopped onion. Add the tomato, a point of salt and brandy. Cook a few minutes to reduce and add the flour, baking it for about 2 or 3 minutes. Add the hot fish stock, stirring constantly and cook until smooth and thick (about 10 or 15 minutes). Add the chopped mussels and continue cooking until the dough begins to pull away from the pan. Remove from the fire.

Put the dough on a tray covered with plastic wrap. When cool passing them prepare croquettes in flour, beaten egg and breadcrumbs. Fry in hot oil.

 

 

OPTION 2.

Ingredients

1 tablet of fish broth salt -30%

200 gr.

bread crumbs

3 eggs, beaten

2 dl. olive oil

1 pinch of white pepper

grated nutmeg

3 leaves of fresh parsley

2 cloves garlic

2 small onions

1 kg. mussel

200 gr. Of flour

preparation

Step 1

Clean the mussels and put them in a large saucepan with a little water, salt and bay leaf to boil. We release them from the shells and chop finely.

Step 2

Chop the onion like garlic and parsley leaves and rustir in a little olive oil. Add the flour and season with fish broth. When all mixed incorporate milk, which you previously heated to the boiling point, flavored with grated nutmeg.

High heat and keep stirring add the mussels and pepper. Continue stirring until a homogeneous creamy white sauce and remove from heat.

step 4

We extend the pasta and let cool. On a floured counter top shape croquettes. Dip in beaten egg and breadcrumbs, batter again with egg and breadcrumbs and fry in very hot oil.
